Pumpkin-Oat Dog Treats

2 cups whole-wheat flour
1/2 cup old-fashioned rolled oats
1/2 cup rye flour
1/3 cup brown rice flour
2 tablespoons milled flaxseed
1/2 teaspoon cinnamon
1 cup mashed pumpkin
1/4 cup water
2 tablespoons canola oil
1 tablespoon honey
1 large egg

Preheat oven to 375 degrees.

In a large bowl, whisk together whole-wheat flour, rolled oats, rye flour, brown rice flour, flaxseed and cinnamon.

In a medium bowl, whisk together pumpkin, water, oil, honey and egg. Pour into the dry ingredients and stir to form a stiff dough. Scoop dough out onto a lightly floured surface and knead until the dough is smooth, adding enough extra whole-wheat flour to keep the dough from sticking to your hands - it should feel barely tacky. Cover the dough and set it aside to rest for 5 to 10 minutes.

Roll out the dough on a lightly floured surface until it is about 1/4" thick. Cut out as many treats as you can, re-rolling the dough as necessary. Place onto parchment-lined baking sheets and bake until firm and lightly golden, about 20 to 30 minutes. Remove and transfer treats to a wire rack to cool completely.

Makes several dozen depending on size of cutters used.
