Curried Chicken Salad with Nectarines

Curried Chicken Salad with Nectarines (Adapted from CL)

3 cups shredded cooked chicken breast
2 cups 1/2" to 1" cubed nectarine
1/2 cup diced celery
1/4 cup chopped green onions
1/4 cup mayonnaise
2 tablespoons buttermilk
1 tablespoon fresh lemon juice
1/2 teaspoon hot madras curry powder
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup sliced almonds, toasted

In a large bowl, toss together chicken, cubed nectarine, celery and green onion.

In a small bowl, whisk together mayonnaise, buttermilk, lemon juice, curry powder, salt and black pepper. Pour mixture into the large bowl and toss gently to combine. Sprinkle with the sliced almonds to serve.

Makes about 4 servings.
