Chili Pasta with Beans

Chili Pasta with Beans (Adapted from CL)

1 tablespoon canola oil
3/4 cup chopped onion
12 ounces ground sirloin
2 teaspoons ancho chili powder
2 teaspoons hot chili powder
1 teaspoon cumin
1 teaspoon dried oregano
2 cups beef broth
1/2 teaspoon salt
6 ounces dry wagon wheel or other small shaped pasta
15 ounce can red kidney beans, rinsed and drained
14.5 ounce can fire-roasted diced tomatoes with green chiles
8 ounce can tomato sauce

In a large skillet, heat oil over medium. Add onion and beef to pan - cook, stirring to crumble beef, until the onion is tender and beef is browned, about 4 to 6 minutes. Stir in both chili powders, cumin, and oregano - cook, stirring, for 1 minute. Stir in broth, salt, pasta, beans, tomatoes and tomato sauce - bring mixture to a boil, reduce heat and simmer until the pasta has cooked through, about 12 to 18 minutes.

Top with shredded cheddar, if desired, when serving.

Makes about 4 to 6 servings.

  1. Holy cow this looks delicious! I am so trying this next week ... though I'll probably substitute some whole wheat pasta for the Disney shapes. I do love your inventive use of them though! Kudos! :)

  2. OK, can someone give me an estimate of how many cups 6 ounces of pasta would be? I buy large boxes of macaroni and just pour them into Tupperware containers. And, of course, I don't own a kitchen scale. Thanks!

    Linda - It does depend on the shape and size you use, but for the Disney pasta we used, 6 ounces was about 2 cups.
